Sohan Papdi




Sohan Papdi is one of the mouth watering recipes, however considered to be too sweet but one can make the recipe from sugar-free crystals, Sohan papdi or Soan papdi or Patisa is a popular Pakistani and Indian sweet. It is square in shape, and has a crisp and flaky texture. So take down the recipe and enjoy it .



Ingredients:-





  1. 1 1/4 cup gram flour



  2. 1 1/4 cup plain flour (maida)



  3. 250 GMS. ghee (clarified butter)



  4. 2 1/2 cups sugar



  5. 1 1/2 cup water



  6. 2 tbsp. Milk



  7. 1/2 tsp. cardamom seeds


Method:-






  • Sift both flours together.



  • Then heat Ghee(clarified butter) in a pan.



  • Add flour mixture and roast on low heat till light golden. Keep aside to cool a little, stirring occasionally.



  • Now make syrup out of sugar, Bring syrup to 2 1/2 thread consistency Pour at once into the flour mixture.



  • Beat well with a large fork till the mixture forms thread like flakes.



  • Pour onto a greased surface or thali and roll to 1" thickness lightly.



  • Sprinkle the elaichi (cardamom) seeds and gently press down with palm.



  • Cool, cut into squares, Store in airtight container.
    Remember:- Do not replace Ghee (pure milk fat extracted) with any other oil.

Its a delicate thing, the amount of ghee and time you need to fry has to be optimum ..also it need long time to have floppy things..and when it happens it happens instantly...see this video ..although it does not show the last stage of the flaking ..but usually 4/5 people drag in hand the fried flour to make it flakes. -- Ray
