Dal Bati Churma


Dalbati Churma the Famous Rajasthani dish can be found all the way in Rajasthan, one should not confuse Bati-Choka with Dal-Bati, Dal Bati Churma is the most popular item in Rajasthani cuisine. It is made of three items of bati, dal, and churma. Dal is lentils, bati is a baked wheat ball, and churma is powdered sweetened cereal. Churma is a popular delicacy usually served with baatis and dal. It is coarsely ground wheat crushed and cooked with ghee and sugar. Traditionally it is made by mashing up wheat flour baatis or left over rotis in ghee and jaggery.




Dal




Ingredients for Dal:-




  1. 1-Cup tuvar dal

  2. 1 Medium tomato chopped

  3. 2-3 Green chilies chopped

  4. 2-3 cloves of garlic chopped

  5. 1/2 tsp. Ginger chopped

  6. 2-3 bay leaves

  7. red chili powder to taste

  8. salt to taste

  9. garam masala to taste

  10. mustard seeds

  11. cumin seeds(jeera)

  12. pinch full of asafoetida

  13. 1 tbsp. ghee/oil.

Method:-




  • Pressure-cook tuvar dal.

  • Put ghee/oil in a pan,heat.

  • Now add asafoetida, mustard seeds & cumin seeds.

  • Allow to splutter.

  • Now add garlic, ginger & chili. Stir.

  • Add bay leaves, tomatoes .

  • Now add salt, red chili powder & garam masala.

  • Stir & cover the pan with lid.

  • After sometime pour boiled daal in to the pan & add 2-3 cups of water.

  • Let it boil for 5-10 min.

  • Now your daal is ready.

  • Garnish with chopped coriander & serve hot.













BATI



Ingredients for Bati:-



  1. 3-Cup chapati flour

  2. 1-Cup rava (sooji)ghee/oil & salt to taste

  3. 1/8 tsp.cumin seeds (ajavayan)water


Method:-



  • Mix all ingredients & make dough (tight).

  • Make 8 round balls ( bati).

  • Preheat the oven for 5-10 min now set the temp. of oven to 350.C.

  • Keep all baties in a tray covered with aluminum foil.

  • Now watch baties after every 5-min. & change the sides .

  • After 20-25 min. take all baties out pour some ghee on it & serve hot.




Churma



Ingredients for churma


  1. 200 gm: Wheat flour

  2. 100 gm: Khoya / Mawa

  3. 400 gm: Ghee

  4. 200 gm: Sugar (grounded)

  5. 50 gm: Soaked almond (finely chopped)

  6. 4 : Cardamom (small)

  7. 1" piece: Dalchini




Method:-





  • Melt 150 gm ghee and mix it in wheat flour. Make a stiff dough using very little water.

  • Heat the rest of the ghee in a kadahi. Make about 15-20 balls with the dough.

  • Fry it on low flame till it becomes golden brown. Churn it in grinder after it cools down. Mix khoya.

  • Heat 1 tbsp. ghee in kadahi. Add cardamom seeds and dalchini.

  • Add the above mixture of wheat flour and khoya. Fry it for one minute.

  • When it cools down, add sugar and chopped almonds.

    Serve The Three together Dal And Bati Should Be Hot And Churma Should Be At Normal Temp
